The Concept: Ayà is the cocktail-lounge concept of Hapag. Its name comes from the Filipino word "anyaya", meaning “an invitation” or “to invite,” reflecting its concept of bringing people together through Filipino food, drinks, and hospitality.
Ayà highlights Filipino flavors through small plates, local ingredients, reimagined Filipino dishes, and creative cocktails. The kitchen also incorporates traditional preservation and fermentation techniques such as koji, buro, and lacto-fermentation to create deeper and more complex flavors.
